“When I was growing up, American food seemed glamorous. This was the ‘80s, and diners such as Hard Rock Cafe and Planet Hollywood were where the stars hung out. Since then, I’ve been fortunate enough to travel to America to host events and record programmes. Yes, the burgers were great – but it was good to see that the growers, cooks and chefs took so much pride in their produce and cooking. Here are some of the recipes I picked up along the way. Enjoy each on their own, or as one big feasting menu. It’s a good taste of US home-style cooking.” Tom Kerridge

When I first tried this, it was served with onion rings, coleslaw and mac ‘n’ cheese. It’s ideal for roasting or barbecuing, once the weather has warmed up.
