FRIED PICKLE-BRINED HOT WINGS
Makes 4 servings
16 whole chicken wings (flats and drumettes attached)
1½ cups dill pickle juice
2 cups plain stone-ground cornmeal
1 cup self-rising flour
2 tablespoons kosher salt
1 teaspoon onion powder
1 teaspoon ground black pepper
2 cups whole buttermilk
1 large egg
1 teaspoon hot sauce
Vegetable oil, for frying
2½ cups dill pickle chips, drained

1. In a large resealable plastic bag, combine chicken and pickle juice. Seal bag; refrigerate, turning bag occasionally, for 8 hours.
