GLUTEN-FREE GOODNESS

Good news! Gluten-free (GF) fodder has progressed from stale-tasting bread alternatives. Indeed, gluten-free products – bread, pasta, cereals and more – are arguably tastier than ever before. And so they should be, given that data shows around one-in-10 people in the UK now avoid gluten.star Megan McKenna was diagnosed with coeliac disease aged just seven and has spent the time since honing her gluten-free recipe-making craft. ‘I’ve been following a strict gluten-free and wheat-free diet for years, and discovered that if you swap a few ingredients here and there in standard recipes, you can make anything GF!’ says McKenna. Her new book is packed with 80 gluten-free recipes, from Quick Bites, Naughty Nights In and Posh Nosh, to treat-yourself desserts in the Heaven O’Clock section. Here’s a healthy recipe for you to try. It’s so good that McKenna eats it once a week!
