TUNA BROCCOLI BAKE

A quick and economical fish bake, this is perfect for a comforting, midweek meal that delivers your veg quota with delicious broccoli, butter beans and sweetcorn.

SERVES 6

200g (7oz) broccoli, broken into florets
2 x 220g tins tuna in olive oil, drained
1 x 380g tin of butter beans, drained and rinsed
1 x 198g tin sweetcorn, drained
For the béchamel:
60g (2oz) unsalted butter
60g (2oz) plain flour
700ml (1¼ pints) whole milk
For the topping:
25g (1oz) panko breadcrumbs
20g (½oz) Parmesan, grated

1 Preheat the oven to 200C/Gas 6. Cook the broccoli
