Australia Day FEAST
GREATEST STEAK SANDWICH
SERVES 4 PREP AND COOK: 25 MINS
1 tblsp olive oil
2 tsps Cajun seasoning
600g beef rump steak
2 brown onions, sliced
6 cloves garlic, crushed
1 tblsp brown sugar
2 tsps balsamic vinegar
½ cup cottage cheese
1 tblsp horseradish cream
2 tsps finely grated lime rind
4 rashers rindless middle bacon
4 ciabatta rolls, split
2 avocados, sliced
1 cup rocket leaves
¼ cup spicy tomato relish
Crinkle-cut chips and gherkins, to serve
1 Rub combined oil and seasoning over steak. Season with salt and pepper. Set aside.
2 Heat an oiled, large frying pan over a medium heat. Add onions and half the garlic. Cook, stirring occasionally, for about 10 minutes, or until softened and browned. Add sugar and vinegar. Cook for 2 minutes. Season with salt and set aside.
3 Combine cottage cheese, horseradish cream, lime rind and remaining garlic in a bowl.
Heat a large, barbecue grill plate over a high heat.
