One-tray big breakfast
Low effort, maximum enjoyment.
SERVES 2 PREP 5 MINS COOK 25 MINS
✱ Low-calorie cooking spray
✱ 2 large eggs
✱ 4 flat field or portobello mushrooms
✱ 1 tsp dried thyme
✱ 4 Slimming World Pork Sausages (available from Iceland stores)
✱ 2 large tomatoes, halved
✱ 6 back bacon rashers or medallions, all visible fat removed
✱ Chopped fresh parsley, to serve
Preheat the oven to 200C/Gas 6. Spray 2 x 8cm ramekins with low-calorie cooking spray, crack 1 egg into each and season lightly. Peel the mushrooms if Spray a non-stick roasting tin with low-calorie cooking spray and place directly over a medium-high heat. Add the sausages and brown for 3 mins, tossing them occasionally so that they brown on all sides. Add the tomatoes, mushrooms and egg ramekins to the sausages in the tin, transfer to the oven and cook for 10 mins. Add the bacon and cook for another 7-8 mins or until the tomatoes and mushrooms are tender, the eggs are set to your liking and the sausages and bacon are cooked through. Divide between plates and scatter over the parsley to serve.
