Eva’s smoked seafood tagliatelle

Tagliatelle ai frutti di mare

My daughter Eva loves a seafood pasta and this recipe is dedicated to her. She is a gorgeous little force of nature who generally acts more like an adult than I do! This simple dish is really a vehicle for the mussels which give an instant depth of flavour, along with the oil from the can which they have infused with their smokiness. I always add canned squid too, as it works well alongside the mussels.

85g can smoked mussels in oil
2 garlic cloves, peeled and sliced
400g can cherry tomatoes
a pinch of sugar
a very small pinch of chilli flakes
½ tsp ground cinnamon
250g dried tagliatelle or spaghetti
2 x 110g cans squid in• •
