PINEAPPLE CUPCAKES

Naturally sweet exotic fruits like pineapple make excellent replacements for refined sugar in baking. You won’t miss the sugar in these half pudding, half cupcake rays of sunshine on a winter’s day.

MAKES 12

200g (7oz) fresh pineapple, peeled, cored and chopped
150g (5oz) unsalted butter, softened
100g (3½oz) coconut sugar
3 eggs
200g (7oz) self-raising flour, sifted
1tbsp baking powder
4tbsp agave syrup
Single cream, to serve

You will need:

12-hole muffin tin, filled with muffin cases

1 Preheat the oven to 180C/Gas 4. Place 50g (1¾oz)
