SPICY PRAWN BRIOCHE SLIDERS
MAKES 10 PREP 5 MINS
• ½ cup mayonnaise
• 2 tbsp sriracha
• 1 bunch chives, finely chopped, reserve 1 tsp for garnish
• 10 round slider buns, halved
• 1 small baby cos lettuce, leaves separated
• 200g cooked peeled prawns
• coriander leaves, lime cheeks, to serve
1 In a small mixing bowl, combine mayonnaise, sriracha and chives.
2 To assemble prawn sliders, spread both cut sides of the brioche buns with the spicy mayonnaise. Place a single lettuce leaf inside the bun. Top with 3-4 prawns (depending on the size of prawns) and extra spicy mayonnaise.
3 Garnish spicy prawn buns with extra chives and coriander leaves. Serve with lime cheeks.
