PUMPKIN & FETA PIZZA
MAKES 2 PREP + COOK 20 MINS
• 200g pumpkin
• 2 large pita breads or store-bought pizza bases
• 2/3 cup tomato pasta sauce
• 2 tbsp olive oil
• 100g feta
• 50g rocket leaves
1 Preheat oven to 220°C. Grease two oven trays or pizza pans.
2 Using a vegetable peeler, slice pumpkin into thin strips.
3 Place breads or bases on oven trays, spread with sauce, then top with pumpkin. Drizzle pizza with olive oil and sprinkle with crumbled feta.
4 Bake 10 mins or until pumpkin is tender and bases are crisp. Top with rocket to serve.
TIP
For an easy spice kick, try arrabbiata sauce instead.
