Layered Tabouli and Vegie Salad
Serves 8-10, Prep and Cook 40 mins
5 small sweet potatoes (1kg), cut into 1½ cm-thick slices500g cauliflower, cut into small florets2 tblsps olive oil1 tsp smoked paprika1 cup fine burghul2 Lebanese cucumbers, quartered lengthways, chopped1 cup roughly chopped fresh parsley½ cup roughly chopped fresh mint3 green spring400g can chickpeas, drained, rinsed200g punnet grape tomatoes, halved½ cup bottled Honey & Dijon Vinaigrette dressing1 pomegranate (1 cup seeds)
