Basic Poke
INGREDIENTS
1 pound red-meat fish
¼ to ½ cup limu, washed and chopped into 1 to 2 inch pieces
1 tablespoon Hawaiian salt
1 or 2 red Hawaiian chili peppers, seeded and minced
2 tablespoons sesame oil
PREPARATION
Cut the fish into ½-inch cubes, and refrigerate while preparing the rest of the dish. Combine the limu, salt, peppers and sesame seed oil. Add the fish, and mix until well coated. Chill until ready to serve.
SERVES 3 to 6
