Barbecued octopus

PREP + COOK TIME 30 MINUTES (+ REFRIGERATION) SERVES 4

3 medium lemons (420g)
⅓ cup (80ml) extra virgin olive oil
½ teaspoon dried oregano leaves
2 cloves garlic, crushed
1kg baby octopus, cleaned (see Test Kitchen note, below)
4 fresh long red chillies rocket leaves and fresh flat-leaf parsley leaves, to serve

1 Finely grate rind from 1 lemon; squeeze juice. Place lemon rind and juice, the oil, oregano and garlic in a screw-top jar; shake well. Season to taste.

2 Place octopus and half the dressing in a large bowl; toss to coat in mixture. Cover; refrigerate for 30 minutes.
