□ 365g dehydrated cumquats (available from The Kumquatery – ) or any mixed peel if not available□ 225g currants□ 225g seedless raisins□ 225g sultanas□ 1 cup cumquat brandy or regular brandy□ 115g plain flour plus extra for dusting□ good pinch of ground cinnamon□ good pinch□ good pinch of ground ginger□ good pinch of mace□ sea salt to taste□ 225g unsalted butter□ 225g breadcrumbs□ finely grated zest of 2 lemons□ 2 Granny Smith apples peeled and grated□ 75g flaked almonds□ 3 free-range eggs
