SUMMER ON A PLATE

WOOD-SMOKED BACON SALAD

There’s an array of flavours and textures at play here – from the deliciously creamy avocado to the subtly sweet dressing and crunchy walnuts – all working in unison with the woody bacon and tart goat’s cheese. Nestled on a bed of rocket, this is a quick and easy salad to whip up, making it a great option for Sunday dinners or when you don’t feel like eating anything too filling.

PREPARATION: 6 MIN

COOKING: 10 MIN

250g wood-smoked back bacon
150g goat’s cheese, sliced into 1cm-thick rounds
1L (4c) rocket
2 avocados, sliced

DRESSING

15ml (1T) water
15ml (1T) lemon juice
30ml (2T) tangy light mayonnaise
30ml (2T) full-cream plain yoghurt salt and freshly ground pepper

TO FINISH

125ml (½c) roughly broken walnuts
