BEETROOT SOUP
Scrumptious best describes this soup.
SERVES 4-6 PREPARATION: 15 MIN COOKING: 20-30 MIN.
1,2kg beetroot (8-10 large beets), peeled and sliced into quarters
1 small butternut, peeled and cubed
2 cinnamon sticks
1L (4c) chicken stock
250ml (1c) freshly squeezed orange juice
500ml (2c) plain yoghurt
5ml (1t) freshly grated nutmeg
salt and freshly ground black pepper
chopped fresh mint and olive oil to garnish
