For the sponge:

• 4 large eggs, separated
• 150g unsalted butter, at room temperature
• 200g caster sugar
• 1tsp vanilla paste
• 175ml brewed coffee, cooled

• 175g self-raising flour For the filling and coating:• 600ml double• 1tsp vanilla bean paste• 1tsp coffee extract (we used Nielsen-Massey)• 4tbsp Lotus Biscoff Spread• 30g dark chocolate, grated
