Sweet & sour beetroot salad

SERVES 4

Pineapple brings a subtle sweetness to this intriguingly simple salad, which showcases one of my favourite vegetables – beetroot. This recipe also ticks the boxes for its Ayurvedic and wellness properties.

2 teaspoons coconut oil
1 teaspoon black mustard seeds
1 pinch asafoetida
250g grated beetroot
1 cup mung bean sprouts
