PECAN CONDENSED MILK CAKE
We use condensed milk to sweeten the cake and the topping. The condensed milk in the batter ensures the cake turns a deep golden brown when it’s baked.
MAKES 1 MEDIUM RING CAKE PREPARATION: 15 MIN + COOLING BAKING: 40-45 MIN
CAKE
250g soft margarine
125ml (½c) light brown sugar
125ml (½c) condensed milk
5ml (1t) vanilla essence
4 eggs
500ml (2c) self-raising flour
5ml (1t) ground cinnamon
5ml (1t) ground ginger
2,5ml (½t) salt
125ml (½c) milk
TOPPING
250ml (1c) cream
125ml (½c) condensed milk
100g pecan nuts, finely chopped
Preheat the oven to 180°C. Grease a 20cm ring baking tin well with margarine or butter and dust with a little cake flour.
