SPEEDY, SUMMERY LOW-CARB EATS

Enter: science-backed, flavour packed eats (hello, cheese toastie!) that’ll satisfy all tastes.

CHILLI THYME LAMB WITH GARLIC KALE AND MUSHROOMS

1 tbs extra virgin olive oil
1 tsp dried chilli flakes
Juice of 1 lemon
8 sprigs thyme, leaves picked
4 x 150g lamb backstraps

GARLIC KALE AND MUSHROOMS

2 tbs extra virgin olive oil
1 bunch Tuscan kale, white stalks removed, roughly chopped
300g Swiss brown mushrooms, wiped clean and sliced
3 cloves garlic, crushed
2 tbs red wine vinegar
2 zucchini, diagonally cut into 1 cm thick slices

Combine the olive oil, chilli flakes, lemon juice and thyme in a large dish. Add the lamb, toss to coat, then leave to marinate for an hour, if you have the time.
