STEWED AMARANTH WITH APPLES

6 small apples
1 orange
2 tbsp maple syrup
1 tbsp cold-pressed coconut oil
Melted cinnamon

STEWED AMARANTH

1½ cup amaranth seeds (soaked in water for at least 8 hours)
3 cups fresh, unsweetened almond milk
2 tbsp maple syrup
1 tsp vanilla powder
A pinch of sea salt
Coconut flakes
Pistachios (unsalted and crushed)

Heat up the oven to 390°F (200°C). Cut the apples in half. Mix orange juice with syrup and coconut oil. Place the apples on a baking tray and brush them with the orange/maple syrup mixture. Sprinkle cinnamon on top and bake the apples for 20-25 minutes until they turn golden.
