CHICKEN SAUSAGE CACCIATORE

SERVES 4 PREP 10 MINS COOK 40 MINS

2 tbsp olive oil
8 thick chicken sausages
1 large onion, chopped
2 cloves garlic, crushed
200g small button mushrooms
200g punnet grape cherry tomatoes
½ cup white wine
6 sprigs fresh thyme, plus extra to serve
400g can cherry tomatoes
¾ cup chicken stock
260g jar chargrilled capsicum, drained
¾ cup Sicilian olives marinated in lemon and herbs
Steamed broccolini, baby spinach leaves, crusty bread, to serve
