CHICKEN SAUSAGE CACCIATORE
SERVES 4 PREP 10 MINS COOK 40 MINS
• 2 tbsp olive oil
• 8 thick chicken sausages
• 1 large onion, chopped
• 2 cloves garlic, crushed
• 200g small button mushrooms
• 200g punnet grape cherry tomatoes
• ½ cup white wine
• 6 sprigs fresh thyme, plus extra to serve
• 400g can cherry tomatoes
• ¾ cup chicken stock
• 260g jar chargrilled capsicum, drained
• ¾ cup Sicilian olives marinated in lemon and herbs
• Steamed broccolini, baby spinach leaves, crusty bread, to serve
