THAI CURRIES conjure that cartoon image of steam coming out of your ears, but that’s fantasy. In reality, Thai curries are assertive but they aren’t overwhelming. Curry pastes are complex mixtures with dozens of fresh or dried chiles, herbs, and spices; most all native to Southeast Asia.
