5 ways with APPLES

KALE, CHEESE AND APPLE SALAD

Crunchy, flavoursome and low fat, this salad makes a great lunch or side dish.

SERVES 4

100g (3½oz) curly kale
60g (2oz) shelled walnuts or pecans, roughly chopped
100g (3½oz) reduced-fat mature Cheddar, diced
2 apples, cored and sliced

For the dressing:

100ml (3½fl oz) 0% fat crème fraiche
2tsp runny honey
2tsp creamed horseradish
