• Greek yogurt

Yogurt is milk that is fermented to make it thick and sour. Greek yogurt slightly differs in that the finished product is hung in muslin to remove excess whey, making it thicker and creamier.

• Kefalotyri

A hard, salty cheese made from either sheep’s or goat’s milk, or sometimes both.

• Harissa

Originally from North Africa, but eaten across the Eastern Mediterranean, too, harissa is a hot chilli paste that often includes roasted red peppers, garlic and spices.

• Filo pastry

Meaning ‘leaf’ in Greek, filo pastry is very thin sheets of unleavened flour and water pastry that is often brushed with oil or butter, and then layered and baked.
