FRIDAY NIGHT fakeaways

The ultimate cheeseburger

This is a fantastic burger: beef patty, crispy shallots, caramelised onions and an incredible homemade burger sauce. Freshly ground meat from a butcher is always best to use if you can. Pick the fattiest cut – the higher the fat content, the juicier the burgers.

■ Serves 4 ■ Takes 1 hr

500ml olive oil, for frying
2 medium onions, finely sliced
800g beef mince
4 brioche buns
vegetable oil, for frying
