■ Red onion 2, 1 finely sliced, 1 diced
■ Lemon 1, juiced
■ Cod loin steaks 2
■ Curry paste 1 tbsp, use whatever you have
■ Turmeric 1 tsp
■ Red lentils 200g
■ Water 1 litre
■ Sunflower oil 2 tbsp
■ Chillies 6, dried
■ Curry leaves 10
■ Mustard seeds ¼ tsp, brown
■ Mango chutney to serve
■ Lime wedges to serve
