ROAST LAMB WITH PRESERVED LEMON
SERVES 6 PREP 10 MINS + MARINATING COOK 1 HOUR 30 MINS
• ¼ cup olive oil, plus 1 tbsp extra
• ½ preserved lemon, sliced
• 3 garlic cloves, crushed
• 2 tsp cumin seeds
• 1 tsp smoked paprika
• ½ tsp turmeric powder
• ½ tsp chilli flakes
• 2kg leg of lamb
• 1 onion, cut into wedges
• 1 red capsicum, seeded, thickly sliced
• ½ cup Sicilian olives
• 1½ cups couscous
• 1½ cups just-boiled water
• ½ cup coriander leaves
• ¼ cup flaked almonds
1 In a large dish, combine oil, lemon, garlic and spices. Add lamb, turning to coat. Marinate at least 2 hours.
2 Preheat oven to 180°C. Place a wire rack in a roasting dish.
Place lamb and onion on rack in dish.
