Beef Wellington
This is a classic dinner party dish that, when executed perfectly, will never fail to impress your guests. Eye fillet is an expensive cut of beef, so this dish should be reserved for special occasions.
Serves 4
50g butter Salt to season
1 kg trimmed beef eye fillet (ask for an even cut from the middle)
1 garlic clove, finely chopped
3 shallots, finely chopped
100g white button mushrooms, finely chopped
40g lamb’s liver, finely diced
1 teaspoon Dijon mustard
4 tablespoons tomato purée
Pinch freshly chopped thyme
Pinch freshly chopped parsley
Salad and steamed new potatoes to serve (optional)
