Stretch out SUMMER

Orzo, butternut squash and pea one-pot

Oozy and comforting, this hearty all-in-one uses minimal equipment but delivers maximum flavours.

Serves 8  Ready in 1 hr

1 onion, diced
2 garlic cloves, diced
2tbsp olive oil
800g butternut squash, peeled and cut into 1cm-thick half moons
150g Boursin or herby cream cheese
800ml vegetable stock
300g orzo
200g frozen peas
Parmesan to serve, optional

You will need:

A pot with a lid that’s suitable for the hob and oven

1 Heat the oven to 220C/Gas 7. On the hob, soften the onion and garlic in the pot with 1tbsp oil. Put to one side.

2 Add the squash to the dish with the remaining oil and a pinch of salt, and roast in the oven for 25 mins.
