HARISSA COURGETTE SALAD WITH PEACHES,TOASTED COUSCOUS & FETA CHEESE
Serves 4 Preparation time 15-20 minutes Cooking time 10 minutes
INGREDIENTS
• 5 tbsp olive oil, plus more to drizzle• 4 small firm, green or yellow courgettes, trimmed and sliced in 1cm/½in slices• Finely grated zest of 1 lemon, then cut the lemon in half• Salt and freshly ground black pepper• 3 tbsp harissa• About 190g/6½oz couscous• 700ml/24fl oz boiled water• 3 ripe peaches, stoned and sliced• 1 x 200g packet feta, crumbled
