Kim’s honey vanilla cupcakes
MAKES 24 Preheat oven to 170°C and arrange cupcake cases in muffin tins. Beat 150g softened butter, 1 2/3 cups sugar and 1/4 cup honey in an electric cake mixer until incorporated. Add 2 eggs, one at a time, and 1½ tsp vanilla extract, then beat mixture for 5 minutes on high.
