CREME FRAICHE BANANA AND PASSIONFRUIT CAKE
SERVES 8 PREP AND COOK: 1 HOUR, 10 MINS
175g butter, softened
¾ cup caster sugar
3 eggs, at room temperature
2 cups self-raising flour
1 cup over-ripe mashed banana
2 tblsps fresh passionfruit pulp
200ml tub crème fraîche
ICING
1 cup icing sugar mixture
1 tblsp fresh passionfruit pulp
1 Grease a 22cm round baba cake pan. Sprinkle with flour, shaking away the excess.
