EMMA’S SURPRISE MUFFINS
MAKES 9 WIGGLY MUFFINS
1½ cups self-raising flour
30g butter, chopped
200g ham, chopped finely
¼ cup semi-dried tomatoes
1 tbsp chopped basil
½ cup grated parmesan
1 egg
½ cup milk
9 balls cherry bocconcini
PARENT Preheat oven to 200°C. Oil nine holes of a 12-hole (⅓-cup/80ml) muffin pan.
Put flour in a large bowl. With clean hands, rub the butter into the flour with your fingertips
