BBQ BURGERS

If you prefer, cook the burgers on a barbecue. Cook over ashen coals, or on a high gas setting, for the same times stated in the method.

THE RIGHT CUT

We’ve kept things simple by using chuck steak for the perfect ratio of about 15 per cent fat to meat. It’s good value, too, so you can buy better-quality beef. We used organic dry-aged Dexter for under £2 per burger.
