Sumac strawberry meringue nests

PREP + COOK TIME 1 HOUR 15 MINS (+ COOLING & REFRIGERATION) MAKES 20

4 egg whites, at room temperature
1 cup (220g) caster sugar, plus ⅓ cup (55g) extra
1 tbsp cornflour
2 tsp white vinegar
250g fresh or frozen strawberries, thinly sliced into rounds (see tip)
1½ tbsp sumac
300ml thickened cream
1 tsp vanilla extract

1 Preheat oven to 120°C. Grease 3 oven trays and line with baking paper.
