Easy Christmas cake

You’ll have fun decorating this not-so-rich Christmas cake, which can be made with one day’s notice! This recipe will keep traditionalists and fruit mince enthusiasts happy.

SERVES 12 PREP AND COOK TIME 1 HOUR 30 MINUTES

3½ cups (525g) self-raising flour
1½ cups (375g) firmly packed brown sugar
1 tablespoon mixed spice
1 tablespoon ground ginger
375g unsalted butter, chopped
6 eggs, lightly beaten finely grated rind and juice of 2 oranges
200g sour cream
410g fruit mince store-bought mini gingerbread men and Christmas tree decorations, to serve

BRANDY BUTTER CREAM

375g unsalted butter, softened
1 tablespoon vanilla bean paste
4½ cups (720g) pure icing sugar, sifted
½ cup (125ml) brandy
