Marvellous mangoes

Coconut Mango Cake

CAKE

125g butter
¾ cup caster sugar
2 eggs
½ cup desiccated coconut
1¼ cups self-raising flour, sifted
1 cup buttermilk

Preheat the oven to 180°C. Grease a 6cm-deep, 25cm heart-shaped cake pan. Line the base with baking paper.

Use an electric mixer to beat the butter and caster sugar until light and fluffy.

Add the eggs. Beat until combined. Add the coconut, flour and buttermilk in two batches, stirring after each addition.

Pour the mixture into the pan. Bake
