Walnut & spiced pear pull-apart

1/4 cup (55g) caster sugar, plus 2 tbsp extra
1 tbsp brown sugar
1 tsp ground cinnamon
¼ tsp ground cloves
1 tbsp water
3 cups (450g) self-raising flour
40g cold butter, chopped
11/3 cups (330ml) buttermilk, plus 1 tbsp extra
1/2 cup (60g) roasted walnuts, chopped
CARAMEL SAUCE
1 cup (220g) firmly packed brown sugar
100g butter, chopped
300ml pouring cream
