Apple appeal

With autumn making its presence felt, it’s a great time to try new recipes using apples. This selection features the fruit cooked and served with pork and radicchio, caramelised, combined with rhubarb and made into a pie and uncooked as a filling for a dessert cake with pistachio, lime and coconut cream.

SWEET AND STICKY APPLE PORK CUTLETS

2 tbsp olive oil
4 pork cutlets
4 medium red apples, skin on
1 tbsp soy sauce
4cm piece fresh ginger, finely grated
2 tbsp brown sugar
2 tsp finely grated orange zest
1 cup freshly squeezed orange juice
