Lemon, pepper and ricotta gnocchi

Gnocchi di ricotta, limone e pepe

SERVES 4-6

PREPARATION 20 minutes

COOKING 10 minutes

Wonderful artisanal gnocchi that, once you have got the hang of, you will make over and over again. The flavours are gentle and fresh with just a little kick from the pepper. Dusted in lashings of Parmesan and drizzled with a good extra-virgin olive oil and fresh lemon, it is a perfect dish all year round, as a simple spring supper or a hearty dinner served alongside short ribs or stews.

• 50g ricotta• grated• 20g freshly grated Parmesan cheese, plus extra to serve• 100g plain flour, plus extra for dusting• 1 large free-range egg, beaten• ½ tsp ground white pepper, plus extra for dusting• ½ tsp sea salt• extra-virgin olive oil• 20g torn mixed fresh green herbs of your choice
