Roast chicken with broad beans and lemon

COOKING 1 hour

I adore broad beans and grow them every year, with varying degrees of success. My husband loves chicken, and this is a perfect relaxed, easy summer Sunday roast. It’s tasty, colourful and earthy. Served with lemon and parsley mash. Simply divine.

375g fresh shelled broad beans
2 tbsp olive oil
1.5kg free-range organic chicken pieces, bone in, skin on
3 onions, peeled and roughly chopped
a handful of fresh thyme
