Dinner REINVENTED

Inpired by his travels and his mother’s cooking, Masterchef-alumni Khan Ong’s food is fresh, zesty and incredibly tasty. From tacos to rice paper rolls, he expertly reimagines his favourite Vietnamese dishes into a fusion of traditional and modern flavours and colours. The result? Seven delish recipes that are perfect for a quick, healthy midweek dinner, a cheeky Saturday night in with Netflix or a long, lazy Sunday afternoon sesh with friends. Enjoy!

Crispy FISH TACOS

“My close friends know that I have an obsession with Mexican and Tex-Mex food. It all came about on a trip to Los Cabos, Mexico, in 2015. The way the Mexican flavours are pounded into every dish, with high levels of acidity and different textures? Delicious! Everyone should have a taco recipe up their sleeve.”

SERVES 2

60g plain flour
1 tsp smoked paprika
1 tsp ground cumin
1 tsp garlic powder
Pinch of sea salt
2 eggs, lightly beaten
120g (2 cups) panko breadcrumbs
250g barramundi or other firm, white fish fillets, cut into strips
Neutral oil for deep-frying (such as vegetable oil)
6 soft corn or wheat tortilla, warmed (or you can use hard taco shells if you prefer)
¼ red cabbage, shredded
1 baby cos lettuce, shredded

SMOKED MAYO

3 tbs mayo
1 tsp smoked paprika juice and zest of 1 lime
Pinch of sea salt

SALSA

1 red shallot, finely diced
