Peri-peri Chicken Breasts

4-6 skinless chicken breast
2/3 cups lemon juice
160ml peri-peri sauce
1tsp baking powder
4 tbs olive oil
2 tsp crushed garlic
salt and pepper

Slit the rough side of each chicken breast about 2/3 of the way through.

Place the breasts on a board or work surface and flatten.

Place the butterflied breasts into a shallow dish and squeeze over the juice of half the lemon and coat them generously with peri-peri sauce.

Add the crushed garlic.

Leave them in the fridge to marinate for 30 minutes to a few hours. The longer the better.
