Coconut, Rose Cotton Sponge Cake

4 eggs, separated
¾ cup flour
½ cup sugar pinch of salt
¼ cup milk
2 tsp vanilla
¼ cup oil
¼ tsp cream of tartar
¼ cup desiccated coconut
¼ cup fine semolina

ROSE SYRUP

1 cup sugar
½ cup water
¼ cup rose water

Preheat the oven to 160ºC. Beat the egg yolks with ¼ cup sugar.

Add the salt, milk, vanilla and oil and mix together.

In a separate bowl, whisk the egg whites until soft peaks form. Add the cream of tartar. Gradually add ¼ cup sugar. The eggs should be stiff.

Add the flour, semolina and coconut to the egg yolk mixture.

Now fold in the egg white mixture into the cake
