TROPICAL SORBET CAKE
SERVES 6-8 PREP AND COOK: 40 MINS
½ cup shredded coconut
½ cup finely chopped unsalted macadamias
4 x 125ml tubs lemon lime sorbet
1L tub vanilla ice-cream
4 x 125ml tubs passionfruit sorbet
Sliced peaches, fresh passionfruit pulp and fresh mint, to decorate
Grease a large loaf pan (15cm x 23.5cm x 9cm deep).
