ROSEMARY & RED WINE LAMB SHANKS
SERVES 4 PREP 15 MINS COOK 8 HOURS 20 MINS
• 1 tbsp olive oil
• 4 lamb shanks
• 1 large red onion, coarsely chopped
• 2 cloves garlic, crushed
• 400g can diced tomatoes
• ¾ cup red wine
• ¾ cup water
• 2 tbsp rosemary leaves
• steamed beans, baby carrots, to serve
CREAMY POLENTA
• 2 cups milk
• 2 cups water
• 1 cup instant polenta
• ½ cup finely grated parmesan
• ½ cup cream
1 In a 4.5-litre (18-cup) slow cooker, heat half the oil on High. Cook shanks, in 2 batches, 4-5 mins until browned all over. Transfer to a large bowl.
