BLACK BEAN MUSSELS
These mussels take flavour and texture to a whole new level, hitting your senses from every angle. Salty, sweet, aromatic, juicy and soft. Serves 2
■ Chinese black beans 4tbsp, fermented
■ Vegetable oil 2tbsp
■ Onion 1, finely diced
■ Garlic cloves 2, finely chopped or grated
■ Green pepper 1, finely diced
■ Salt ½tsp
■ White pepper ¼tsp
■ Sugar 1tsp
■ Light soy sauce 2tbsp
■ Mussels 500g, fresh
