Watermelon & cherries in mojito syrup

PREP + COOK TIME 30 MINS (+ COOLING & REFRIGERATION) SERVES 4

2 medium limes
½ cup (125ml) light agave syrup (see tip)
¼ cup (60ml) white rum
2 tbsp finely chopped fresh mint leaves, plus fresh small leaves extra
2 cups (300g) fresh cherries, halved
400g seedless watermelon, coarsely chopped or thinly sliced, cut into 3cm stars
Coconut ice cream, to serve

CANDIED LIME PEPITA BRITTLE

1/3 cup (80ml) light agave syrup
1/3 cup (75g) caster sugar
2 tsp finely grated lime rind
1/3 cup (65g) pepitas (pumpkin seed kernels)

Remove rind from 1 lime using a zester (or peel
