CARROT, COCONUT AND CARDAMOM CAKE
This is a vegan and gluten-free version of the traditional carrot cake, with a delicious flavour twist.
SERVES 12
For the cake:
✣ 450g (1lb) gluten-free self-raising flour
✣ 4tsp gluten-free baking powder
✣ 2tsp ground ginger
✣ 2tsp ground cinnamon
✣ 1tsp ground cardamom
✣ 300g (10oz) light brown soft sugar
✣ 125g (4oz) sultanas
✣ 300g (10oz) carrots, peeled and grated
✣ 250g (9oz) apples, peeled, cored and grated
