Sweet treats and GLUTEN-FREE

CARROT, COCONUT AND CARDAMOM CAKE

This is a vegan and gluten-free version of the traditional carrot cake, with a delicious flavour twist.

SERVES 12

For the cake:

450g (1lb) gluten-free self-raising flour
4tsp gluten-free baking powder
2tsp ground ginger
2tsp ground cinnamon
1tsp ground cardamom
300g (10oz) light brown soft sugar
125g (4oz) sultanas
300g (10oz) carrots, peeled and grated
250g (9oz) apples, peeled, cored and grated
600g (1¼lb) coconut yogurt For the filling and topping:
250g (9oz) coconut yogurt✣ ✣ ✣
